We’ve been shouting about picnics a lot lately, but can you really blame us after all this beautiful weather we’ve been enjoying lately? So we’ve partnered with gemtakesfoodpics to deliver an amazing recipe you can make using your Berry Useful gear that is just perfect for picnic season!
When you think of picnics and summer, salads come to mind, right? We thought so too and this delicious Panzanella is the perfect dish to take with you on your summertime adventures! Follow the recipe below and don’t forget to tell us what you think.
For the giant croutons:
- 2-3 thick slices of sourdough bread (any kind works)
- 2 tbsp olive oil
- 1 pinch of sea salt
Tear bread into large crouton size chunks, cover in olive oil and sea salt and grill until golden.
For the veggies:
- 1 handful of cherry tomatoes, halved
- 1 yellow, red and orange sweet pepper, sliced
- 1 small courgette, thick slices & halved
- ¼ red onion, sliced thinly
For the dressing:
- 1 tsp dijon mustard
- 4 tbsp olive oil
- 2 tbsp red wine vinegar
(why not add some lemon for a tangy twist?)
Combine everything together, and pop it all into your stainless steel food box. You can also upgrade the recipe by adding some mozzarella balls and torn basil too. Perfect!
